Try this healthy family meal that can be made ahead before you leave on your next business trip. 
Traveling moms have meetings, carpools, dance lessons, soccer practice and careers that frequently require travel. What happens to our family’s diet while we’re on the road? Chances are it’s mostly fast food and pizza. But it doesn’t have to be.

Baked Ziti with Baby Spinach

This recipe can be made even faster with pre-washed, bagged spinach.  If you can afford it, buy the organic variety.  It’s better for you and it was never recalled for salmonella.

1 pound ziti pasta
32 ounces marinara sauce (use a good quality one—my favorite is RAO’s Homemade)
5 ounces chopped baby spinach
4 cups mozzarella cheese
1 cup Parmigiano Reggiano cheese
32 ounces ricotta cheese
1 large egg
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon nutmeg


Cook ziti according to package directions.  While the ziti cooks, combine in a large bowl 1 cup of the mozzarella cheese, the Parmigiano Reggiano, salt, pepper, nutmeg and ricotta.  Add the egg and stir until combined.  Then add the baby spinach and mix until combined.  Add the cooked ziti and mix until combined.  In a 9 x 13 inch pan, coat the bottom of the pan with one cup of the marinara sauce and layer in the ziti mixture.  Top with the remaining marinara sauce and cover with remaining mozzarella.  Bake in a 350 degree oven for 25-30 minutes.  Serves 8-10 people.

Make-ahead tips: This can be split into two 8 x 8 pans.  Freeze one and make bake it later or simply refrigerate it for up to two days and then cook.
