They are great to have on your next vacation when you are in a condo or small kitchenette and are looking to save some money and eat a good home cooked meal. Sure, it’s nice to eat out some on vacation, but sometimes nothing hits the spot like mom’s home cooking.  You can usually rest easy knowing you’re not only eating more cost effectively but more calorie and health conscious as well. Smokey Orange Chicken

Rice Pilaf

Green Beans


6 large split chicken breasts, cut in half

1 c orange marmalade

(2 T soy sauce, 2 T liquid smoke)

Rice pilaf

1 bag frozen green beans


   Heat oven to 350o. Place all chicken breasts in baking dish. Season with salt and pepper. Combine marmalade, soy sauce and liquid smoke in a bowl. Pour over chicken to coat. Bake 45 min. Shred leftover chicken and save for quesadillas.

     Prepare rice as directed.

   Prepare green beans according to pkg directions; season and serve.

Chicken Quesadillas

Spanish Rice

Leftover shredded Smokey Orange chicken

4 oz can sliced mushrooms, drained

1 jar artichoke hearts, drained & chopped

½ c chopped fresh cilantro

½ c finely chopped red onion

(1 t garlic salt, ½ t pepper, 1 t cumin)

1 pkg med sized flour tortillas

8 oz shredded cheddar cheese              

5 oz box Spanish rice

   In a bowl, toss chicken, mushrooms, artichokes, cilantro, onion, garlic salt, pepper & cumin. Heat a griddle or non-stick skillet to med-hi & spray with cooking spray. On a flat surface, lay out 6+ tortillas. For each, top with ½ c filling; add ¼ c cheese. Fold in half and place on griddle. Brown on each side, 4 min, until cheese is melted and filling is heated through.

   Prepare rice as directed.
