Apricot, Honey and Almond Granola

  • 2 1 ⁄2 cups old-fashioned rolled oats
  • 1 cup diced dried apricots
  • 1 ⁄2 cup sliced almonds
  • 1⁄4 cup sunflower seeds
  • 1⁄4 cup shredded sweetened coconut
  • 1⁄4 cup raisins
  • 1⁄4 cup honey
  • 1⁄4 cup unsalted butter
  • 2 tablespoons packed brown sugar
  1. Preheat the oven to 325°F.
  2. Lightly spray a large, rimmed baking sheet with cooking spray.
  3. Toss together the oats, apricots, almonds, sunflower seeds, coconut,
  4. and raisins.
  5. In a small pot, bring the honey, butter, and brown sugar to a boil.
  6. Stir to blend.
  7. Remove from the heat and spoon the honey mixture over the fruit and nuts.
  8. Mix lightly.
  9. Spread the granola on the prepared baking sheet in an even layer.
  10. Bake for about 30 minutes, stirring once, until lightly golden brown.
  11. Let the granola cool completely on the baking sheet before serving.
  12. Store the granola in an airtight container
