Half the fun of spring break is “breaking” away from the routine. If cheese and crackers and PB&J are your family’s go-to snacks, try these fun, quick  and healthy recipes to shake things up during your family vacation.

Strawberry Banana Burritos (serves 4)

2 tablespoons whipped light cream cheese, strawberry flavored
1 banana, mashed
4 whole wheat tortillas
8 strawberries, sliced

Combine cream cheese and mashed banana in a small bowl.  Spread one-quarter of the cream cheese mixture on each of the tortillas.  Arrange one-quarter of the strawberry slices on one end of each tortilla.  Roll up each tortilla as tightly as you can.  Serve!


Mini Pizza Sandwiches (serves 4)

8 mini pita breads (Be sure to select a brand with pockets, rather than flatbread-style pitas.)
8 teaspoons jarred marinara sauce
4 oz. part-skim mozzarella cheese, cut into 8 equal slices

Using a knife or kitchen scissors, snip off the tip of each mini pita to make a small opening for each pocket.  Fill each pocket with 1 tsp marinara sauce.  Stuff each pocket with one slice of cheese.
Serve each child two pockets. 
TIP: If you’re not on the go, these taste great heated in the oven or toaster oven for a few minutes. For easy clean-up, place them on a pan covered with a piece of foil.

Donna’s Peanut Butter Playdough
(Special thanks to Katherine Bucar for sharing her mom, Donna’s, recipe for this fun, protein-packed treat. )

1 c. dry milk
1 c. quick oats
1/2 c. honey
1/2 c. peanut butter (creamy)

Mix all ingredients together thoroughly in a medium-sized bowl. The mixture will look crumbly.  Squeeze the mixture between your fingers. If it sticks together, it’s ready. If it crumbles apart, you need to add a bit more peanut butter. Roll the “playdough” into one-and-a-half-inch balls. These can be served immediately or refrigerated until ready to serve.

TIP: Vary this snack by stirring in coconut, dried fruit or a few chocolate chips.
