Need a quick and easy recipe for a dinner you can make in a hotel room kitchenette? As long as you have a nonstick skillet and stovetop and a few key ingredients, huevos rancheros can make a tasty and no-fuss dinner for the whole family. What’s more, by buying a few extra ingredients, you can make a few different meals or snacks with some of the same items.
Ingredients for Making Hotel Room Huevos Rancheros
Cheddar Cheese, shredded
Tortillas (I used wheat; white or even corn tortillas would work fine)
Black beans (optional)
Heat a nonstick skillet to medium heat. Spray with cooking spray or drizzle with oil, then add tortilla and heat for 1-2 minutes. Sprinkle about 2 tablespoons cheese on the tortilla; when it begins to melt, crack an egg over the cheese (try to keep it centered on the tortilla, but if it slides off, that’s OK). When the egg begins to set, flip the whole thing over carefully and let it cook on the other side for about 2 minutes.
Remove from skillet and add more cheese, salsa or other toppings as desired. For a full meal, add a side salad or just top the huevos rancheros with shredded lettuce. You could also add some canned black beans to the tortilla or on the side.
Make Similar Hotel Room Meals or Snacks
Along with huevos rancheros, you can also put together a quick taco salad, soft tacos or chips and salsa. Just toast some tortilla pieces in the oven or on the stovetop, or make soft tacos with the tortillas.
