Beach Side Brownies

These brownies are delicious and also freeze beautifully! Make a batch before you travel, wrap well and pop in the freezer. Pull them a day ahead to defrost and you have a great summertime dessert! For a special treat, the brownies can be transformed into homemade ice cream sandwiches or sundaes. To make ice cream sandwiches, just cut the brownies in half horizontally and sandwich a half inch-thick slab of your favorite ice cream flavor between the brownie slices.

Bittersweet Beachside Brownies

Serves: 12 Brownies
  • 1 ½ pounds good quality bittersweet chocolate
  • 10 ounces (2 ¼ sticks) unsalted butter
  • 6 large eggs
  • ¾ cup granulated sugar
  • 1⅛ cups (packed) dark brown sugar
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon
  • Non-stick aerosol spray or 1 tablespoon unsalted butter
  1. Preheat oven to 350º F.
  2. In a medium saucepan over medium low heat, melt the chocolate together with the butter.
  3. In a large bowl whisk together the eggs and both sugars.
  4. Stir in the melted chocolate and butter. Stir in the vanilla.
  5. In a separate bowl, combine the flour, baking soda and cinnamon.
  6. Stir the flour mixture into the chocolate mixture until well combined.
  7. Grease a 13 x 9 inch pan with non-stick aerosol spray or the tablespoon of butter.
  8. Bake in the oven for 30 to 35 minutes until a toothpick comes out clean.
  9. Cool the brownies to room temperature before cutting into 3-inch squares.
