Meal planning and cooking on vacation doesn’t need to be difficult. Often when I plan what to cook on vacation, I choose simple recipes that are family favorites and some of the easiest meals I can think of. That includes meals with a limited number of ingredients or meals that are easy to throw together. My family may prefer to dine in while on vacation, but that doesn’t mean that I want to spend a large portion of my time in the kitchen, cooking and cleaning.
If you’re planning to cook all or some of your meals on vacation, you don’t want to become overwhelmed and create even more work for yourself when it comes to vacation planning and preparation. When considering what meals to cook on vacation, think simple. An easy way to save time in the kitchen is to plan to prepare a recipe that can be repurposed for a next day meal. Chili is one of my go-to meals. It’s relatively inexpensive, can feed a large number of people, and often provides leftovers that can be used as the base for a meal the next day.
3 Simple Recipes to Cook on Vacation
You can start with your favorite chili recipe or use mine below. This recipe feeds four to six people, but I double it to make sure I have some leftover for another meal.
1 lb. ground beef
1 medium onion, chopped
1 can of dark red kidney beans
1 can of light red kidney beans
1 can of black beans
1 16 oz. jar of salsa (I use mild, but you can spice it up with Medium or Hot)
2 TBSP. chili powder
2 cans of diced tomatoes with green chiles
In a skillet, brown the hamburger and chopped onion and drain. Combine the hamburger with all the other ingredients in a stock pot and simmer over medium heat for 30 minutes, stirring occasionally. Feeds 4-6.
Travel Mom Tip: If you really want to save time in the kitchen, brown the hamburger with the onion, drain and then toss it in a crock pot with all the other ingredients and allow it to cook on low for 4-5 hours while you’re exploring the area. Your meal will be ready and waiting for you after a day sightseeing.
In my opinion, chili is one of those meals that tastes better the next day so it lends itself perfectly to a yummy leftover meal. But rather than eating another bowl of chili, here are two recipes that are popular with my family.
Chili Cheese Fries
This recipe really couldn’t be easier. When you’re shopping to stock your vacation fridge, pick up a bag of frozen French fries and shredded mild cheddar cheese. Cook the French fries as directed and while they’re in the oven, reheat the chili you made the day before. Top the fries with chili and cheese. Continue to heat until the cheese is melted and serve. You can top the fries with sour cream, if preferred.
Easy Taco Salad
1 bag of tortilla chips
Mild Cheddar Shredded Cheese
Romaine or Iceberg lettuce
Sour Cream, optional
Tear lettuce in bite size pieces and set aside. Reheat chili from the previous meal. Layer the lettuce, tortilla chips, chili, cheese and optional toppings on the salad. Serve.
This meal is ready in minutes. If you really want to add a nice touch, mix up some homemade guacamole. It’s super easy and only takes a few minutes to whip up. Here’s my favorite Guacamole recipe, and as far as I’m concerned, the more cilantro the better.
½ – 1 large lemon
2- 4 ripe avocados
1 bunch of cilantro, chopped
2 tsp minced garlic
Salt to taste
Slice avocados in half and remove the pit. Scoop out the avocado flesh and add it to a bowl and mash. Add the garlic, salt, cilantro and juice from ½ the lemon. Stir until combined. Serve immediately.
