If you are traveling, taking along wings is probably not the best idea. But if you have folks coming to your house for a Super Bowl party, wings are well worth the sloppy deliciousness. A tried and true wing recipe from Virgil’s BBQ in Times Square is one of the best wings recipes I’ve ever tried – and the restaurant spilled on what makes them so amazing – recipe included.

You think you can only find great chicken wings in the South?  Think again.  Virgil’s BBQ in NYC serves up more than 30,000 pounds of its secret recipe chicken wings every year.  It’s all in the rub. Chef Glen shows us how the magic is made so you can wow the crowd with these Super Bowl chicken wings at your next event or Super Bowl party.

Virgil’s BBQ Super Bowl Chicken Wings Recipe

Chef Glenn’s recipe is quick and easy to make – just remember to marinate the wings for at least 24 hours before cooking.  Virgil’s Dry Rub tastes delicious on all kinds of meat so feel free to double or triple the recipe and store it for later.

Make the Rub first, you will need it for the marinade.

To make 5-5 1/2c of the Rub, mix the following ingredients in a bowl (I use a whisk to blend):

  • 2 1/2c Sweet Paprika
  • 1c granulated sugar
  • 1/2c Texas-style Chili powder
  • 1/2c Minced onion
  • 1/2c Minced garlic
  • 1/4c Dried Parsley Flakes
  • 6 TBSP kosher salt

For the marinade, mix the following ingredients in a separate bowl:

  • 1/2c olive oil or 1/2c melted butter
  • 1/2c Hot Sauce (I like Frank’s)
  • 4 TBSP Rub
  • 2.5 pounds of chicken wings

Directions

Begin with fresh, raw chicken wings in a large bowl. Add Hot Sauce and oil (or melted butter) and Rub to raw wings.  Thoroughly coat the wings with the mixture.  Marinate 24 hours ( a 2 gallon ziplock works great).

When you are ready to bake the wings, add marinated wings to a cookie sheet and add more dry rub to intensify the flavors.

Bake at 350 Degrees for 50 minutes to an hour. Have a smoker? That’s what Virgil’s uses so even better.

Add wings to a large platter and serve immediately. Really want to add flavor to your party? Serve with a side of Bleu Cheese Dressing.
