snack_mixOne of my favorite travel snacks is a snack mix that has been kid-approved!  The recipe is a combination of several recipes.  It is not the healthiest by any means but it is a treat for the kids because I don’t make it unless we are traveling or it is around the holidays.  They love to see the big Ziploc bags of β€œmom’s snack” packed away in the car when we get ready to leave on a family road trip.


4-6 cups popped popcorn



Kix cereal

Raisins or Craisins (sometimes I even throw in some yogurt covered raisins)

ΒΌ cup butter

2 tablespoons light corn syrup

1/3 cup packed brown sugar

ΒΌ teaspoon vanilla

Put popped popcorn in a roasting pan.  Take last four ingredients and bring to a boil.  Pour over popcorn.  Bake in oven at 325 degrees for 45 minutes, stirring every 15 minutes.  When 45 minutes are up, take out of oven and transfer to a large bowl.  Stir every few minutes as it cools so that the popcorn does not stick together.  Once completely cooled, add desired amounts of ingredients above or try your own!
