Kid-Approved Snack Mix

snack_mixOne of my favorite travel snacks is a snack mix that has been kid-approved!  The recipe is a combination of several recipes.  It is not the healthiest by any means but it is a treat for the kids because I don’t make it unless we are traveling or it is around the holidays.  They love to see the big Ziploc bags of “mom’s snack” packed away in the car when we get ready to leave on a family road trip.

Ingredients

4-6 cups popped popcorn

Pretzels

M&Ms

Kix cereal

Raisins or Craisins (sometimes I even throw in some yogurt covered raisins)

¼ cup butter

2 tablespoons light corn syrup

1/3 cup packed brown sugar

¼ teaspoon vanilla

Put popped popcorn in a roasting pan.  Take last four ingredients and bring to a boil.  Pour over popcorn.  Bake in oven at 325 degrees for 45 minutes, stirring every 15 minutes.  When 45 minutes are up, take out of oven and transfer to a large bowl.  Stir every few minutes as it cools so that the popcorn does not stick together.  Once completely cooled, add desired amounts of ingredients above or try your own!
