Easy Pork Tenderloin Scalloped Potatoes Roasted Green Beans |
12 oz chili sauce 16 oz jellied cranberry sauce (2 T brown sugar) 2 - 2 lb pork tenderloins 1 pkg scalloped potatoes 16 oz pkg green beans, thawed (Oil) |
Heat oven to 375 degrees. Place both tenderloins on a 9X13 baking pan. Season with salt and pepper. Bake for 30 min. Combine chili sauce, cranberry sauce and brown sugar. Pour over pork and bake for 15-20 more min. Let sit for 10 min. Slice and serve with sauce. Save leftover pork for sandwiches. Prepare potatoes according to pkg directions. Toss beans with oil, salt and pepper. Spread in single layer on jellyroll pan. Roast at 450o for 18 – 20 min until slightly browned. |

Russian Pork Rolls Chips |
2 lbs leftover cooked pork, sliced, warmed (Salt and pepper) Thick sandwich rolls or buns, toasted 6 slices Swiss cheese OPTIONAL: 1 can sauerkraut, drained
1 + c Thousand Island dressing 1 bag chips |
Assemble sandwiches with toasted bun, dressing, pork, sauerkraut and cheese. Melt cheese under broiler. Close sandwich and serve with chips on the side. |
